This summer was full of outdoor fun and entertaining, barbecues and family dinners galore with all of our goodies from partnering up with Bed, Bath & Beyond! The fun didn’t have to end as summer did though since our fall started out SO warm, we made sure to soak up as more outdoor time as we could and wanted to share one of our favourite (and super easy) pizza & salad recipes with you now that things have slowed down around here. Now that Ella is in school (sigh), Noah has become my little sous chef – enjoying his mom time and cooking in the kitchen with me is one of his favourite activities, he tends to eat most of the ingredients before they make it to the pizza but hey, I am just as guilty ha ha! We especially enjoy making pizza dough with our KitchenAid® mixer from Bed, Bath & Beyond! I love how our yellow one pops in our white kitchen, yellow is such a popular colour this year and I have also been a big fan, I find it a very uplifting colour to see in the morning when I enter the kitchen and start making breakfast for the kids – I get so many compliments on our mixer when people visit too. Since our kitchen is all gold accents I swapped out the stainless steel bowl for the glass one, I prefer that look at it suits the kitchen so well. I still use the stainless steel bowl for mixing things though and I have to admit, it’s so handy having both bowls for the mixer when making batches of dough! We have theKitchenAid® Artisan® 5 qt. One of our favourite recipes to make when dining outside is pizza on our Camp Chef 14″ cast iron pizza pan from Bed, Bath & Beyond – this pan is so useful for making a wide variety of recipes on the barbecue or in the oven. We use it for potatoes on the barbecue, for poutine in the oven…for like every thing, if you know me – you know I almost always cook with cast iron and this pan is THE BEST! Most recently we used it in the oven for a quick & easy roasted red pepper pizza – one of our favourites! It’s really simple and the kids love it, we usually sprinkle our favourite feta on it but for this day we decided to stick to the good ol’ mozza and enjoy it with a side salad. Our kids LOVE salads, I am so lucky that the kids love their greens – I mean sometimes they aren’t in the mood for salad and I have to sneak in their greens in some way but for the most part they love it. Especially salads with strawberries, blueberries and pumpkin seeds…yum! We enjoyed it all on those melamine Kate Spade striped dining plates I shared in my last post with Bed, Bath & Beyond – love these plates and we will probably use them all year round.
We use a mixture of greens for this salad and toss in our favourite berries and raw pumpkin seeds, then we love just tossing it in pumpkin seed oil, apple cider vinegar and the juice of an organic lemon (but just a little). I love serving salads in our beautiful new B. Smith Acacia Wooden salad serving set, we even got enough individual sized wooden bowls to match for when we have the entire family over! There is something about a good quality wooden salad bowl and you know how much we love to incorporate wood into our decor, our entire island countertop is the same finish as this bowl and serving set!! Bed, Bath & Beyond also sent me this super convenient pizza cutter by OXO, don’t laugh guys but we’ve seriously just been using a big knife for years LOL. Is that ridiculous or have I been living under a rock? I’m pretty sure I kept meaning to grab one when I was in stores but kept forgetting and now I finally have the easiest way to get the perfectly shaped slices…hallelujah! For the pizza dough, it’s also super simple and took less than 30 minutes to prep! Dough is super fun for the kiddos too, we always make our pizzas in fun shapes like hearts or mini personal ones, today we kept it simple with a nice round thin crust. We absolutely LOVE this homemade pizza dough recipe by The Chef in Training, it’s sugar free and perfect every time! I’ve put the recipe for the dough below for you to try for yourself.
Ingredients needed:
- 2 cups warm water
- 1 Tablespoon yeast
- 1 Tablespoon salt
- 5 cups flour, divided
- 4 Tablespoons olive oil (2 Tablespoons per pan)
Instructions
- Mix warm water and yeast and let sit 5 minutes until yeast proofs.
- Add 2 ½ cups flour with proofed yeast and mix well in Kitchen Aid or with a dough hook.
- Add additional 2 ½ cups flour and salt, knead until smooth. Cover bowl with saran wrap. Let dough rest in a ball for 10 to 20 minutes.
- Pour 2 tablespoons of olive oil onto baking sheet or pizza pan and evenly coat bottom of baking sheet or pizza pan.
- Remove dough from bowl and add more flour as needed (a little at a time) to alleviate the stickiness of the dough if needed. I add a few Tablespoons usually.
- Split dough in half and roll each ball of dough very thin and place on greased pan.
- Preheat oven to 400 F
- Now comes the fun part! Top your pizza dough however you would like. If you have a favorite pizza recipe or breadstick recipe, have at it! Be sure and leave a ¾-inch space on the edge for crust.
- Bake each pizza separately at 400 degrees F for 18-20 minutes for pizza and 15 minutes for bread sticks or cinnamon sticks.
- For step #4 we put on our homemade pizza sauce, a TON of mozzarella and our sliced homemade roasted red peppers. My step mom roasts her own red peppers the Macedonian way and they are outta this world good!!!
