We are so excited to share one of our favourite recipes with you, we make these…OFTEN! Recently we visited our local blueberry fields and stocked up on fresh berries, about half of those made it home to bake with lol. Ella and I love spending time in the kitchen together, it’s such a fun way to spend quality time together and teach your kids about healthy ingredients…kids also love eating things that they’ve helped make! It gives them a sense of independence and responsibility and you can learn so much about your little one while cooking with them, I’m so thankful to my friend Tamara Lockwood for capturing these fun moments for us! Our organics live order that we receive every other week usually contains a great big bundle of organic bananas, we love every thing banana around here and bake with them often so naturally with fresh berries and a delivery of organic bananas, this muffins hit the menu! These are not your sugar free kind of muffin but of course that doesn’t mean they can’t be. You can use sugar alternatives and they will be super yummy too and muffins & breads are a great baked good that you can sneak vegetables into like beet juice or zucchini too, like our Banana Zucchini loaf from awhile back on the blog that you can find {here}. Recipe

  • 5 ripe organic bananas
  • 34cup brown sugar or sugar alternative
  • 1 organic egg
  • 1/2 cup apple sauce
  • 1/3 cup Silk Coconut Milk
  • 1cup melted organic butter
  • 1/3 cup coconut oil (yes I sometimes use both oil and butter lol)
  • 2 cups of fresh local blueberries
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 1 cup organic oatmeal
  • 1 12cups unbleached flour

How-to:

  • Mash your bananas in a bowl (perfect job for your little one)
  • Add your sugar, egg and apple sauce
  • Add your melted butter and coconut oil
  • Combine your dry ingredients with your banana mixture & mix it well
  • Spoon your mixture evenly into 24 well buttered muffin tins (we love to overfill when we can so that we an have massive muffins, if you want to do the same just make less than 24 with this recipe)
  • Bake at 375 for approx’ 20 minutes!
