This has quickly become my kids (and husbands) favourite breakfast! I mean, can you blame them? Who doesn’t love oatmeal cookies in the form on pancakes HA!? I’ve always made pancakes from scratch and one morning I decided to toss in some oatmeal and brown sugar, I generally opt for sugar free because the kids find the syrup sweet enough but this morning I was feeling like spoiling the kids and had a craving for sweetness myself. Well, they turned out DELICIOUS!! Craig piped up after one bite that they tasted just like oatmeal cookies right out of the oven, I quickly grabbed a bite too curious about his description because Craig isn’t one to jump up and down in excitement over things…well, they sure did taste like oatmeal cookies! The kids loved them, we loved them and so have guests we’ve made breakfast for and introduced them to and it’s such an easy recipe…I just wish I remembered the exact amount used of each ingredient lol!!!!! Cue the crooked smile, I’m a free hand cook in the kitchen – I rarely measure anything unless I have to. Some of the best recipes come out of my kitchen from pure, random creativity and zero instructions. Just a craving, an idea and some ingredients around the house. These pancakes in particular though are made up of tons of love and the ingredients below, if you are familiar with pancakes you will know by the texture that you’ve done it or just test it out…
- Unbleached Organic Flour
- Organic Quick Oats
- Brown Sugar
- 1 Egg or Egg alternative
- Baking Soda
- Baking Powder
- Coconut Milk
Mix them all up to the perfect consistency and fry in a pan with coconut oil & enjoy! xo
